Ingredients
- 2 tbsp Anjali Chettinad Spice Mix
- 500g potatoes, cubed
- 2 onions, sliced
- 3 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 3 tbsp coconut oil
- Curry leaves
- Salt to taste

Instructions

Prepare potatoes
Wash and cube potatoes. Parboil them until 70% cooked.

Sauté onions
Heat oil, add curry leaves and onions. Cook until golden brown.

Add paste
Add ginger-garlic paste and cook for 2 minutes until fragrant.

Add tomatoes and spices
Add tomatoes and Chettinad spice mix. Cook until tomatoes break down.

Add potatoes
Add parboiled potatoes and mix gently. Cook for 10 minutes.

Final cooking
Add water if needed and cook until potatoes are tender and curry thickens.
